Preserved Tomato & Fresh Mozzarella Salad With A Crispy Basil Waffle

This Signature twist on the Classic Caprese Salad is all about surprise! The savory basil waffle adds a light and crunchy component to the salad. The preserved tomatoes really showcase the flavor of a tomato without being freshly picked from a garden, and the fresh Galbani Mozzarella is presented in a way that highlights it flavor to the fullest.

Ingredients

  • 1 cup Fresh Basil, sliced or shredded
  • 1 cup Whole Milk
  • 1 cup AP Flour
  • 1 tsp Baking Powder
  • 1 tsp Kosher Salt
  • 2 Eggs, separated
  • 1 tbs Granulated Sugar
  • 1 tsp Pure Vanilla Extract
  • 2 tbs Unsalted Butter, melted
  • 1 lb. Oven Roasted Roma Tomatoes, Preserved in Olive Oil, drained
  • 1/2 cup Olive Oil, from preserved tomatoes
  • 1 lb. Fresh Galbani Mozzarella Cheese, cubed
  • 2 tbs Fresh Basil, garnish
  • 1 tbs Sea salt

Directions

1. Preheat greased waffle iron. 2. Steep 1 cup basil in milk. 3. Sift together flour, baking powder and salt in a medium bowl. 4. In a second bowl whisk together egg yolks and sugar, till mixture turns a pale yellow. 5. Add vanilla, butter and milk to yolk mixture and whisk until just combined. 6. In a clean bowl, whip egg whites till soft peaks begin to form. 7. Add dry ingredients to batter and whisk till combined. Fold in egg whites, don’t over mix. 8. Ladle 8 oz of batter into pre-greased waffle iron and cook 4 minutes. 9. Once waffle is cooked, remove from waffle iron and keep warm. 10. Ladle another 8 oz of batter into waffle iron and cook another 4 minutes. 11. Remove second waffle and cut each waffle into 8 equal portions. (total of 16) To Plate: 1. Toast the waffles in the toaster oven till crisp. 2. Place 4 slices on plate. 3. Place 7 slices of preserved tomatoes on top of waffle on the edges 4. Place 9 cubes of Galbani Mozzarella on waffle and plate. 5. Place 7 small basil leaves on plate. 6. Drizzle with small amount of olive oil (from preserved tomatoes) 7. Finish with a sprinkle of sea salt and serve! Note: *The longer the tomatoes are preserved, the stronger the flavor
