Calamari Caprese Salad

Ingredients

  • 1 1/4 cup marinated calamari salad, refrigerated
  • 2 bunch of Watercress, fresh
  • 8 slices Red peppers, roasted and peeled, pre-made
  • 4 tbs Savory tuile batter, pre-made
  • 1 1/2 oz. Basil Vinaigrette, pre-made
  • 3 oz. Extra Virgin Olive Oil, to taste
  • 1 tbs Coarse Sea Salt and Fresh Ground Pepper, to taste
  • 12 slices 8 ounce ball Galbani Premium Mozzarella, thinly sliced
  • 1 sprig chiffonade Basil, cut in strips
  • 1 oz. Red pepper puree, pre-made

Directions

1. Prepare tuile cup and form, let stand until firm 2. Place tuile on plate with seasoned fresh watercress 3. Season marinated calamari, place on plate 4. Brush roasted red pepper and mozzarella with pesto vinaigrette place on plate to finish
