Ingredients

  • 2 cups Fig Caponata
  • 1/2 cup Roasted, salted fava beans, chopped
  • 2 cups Arugula Leaves
  • 3 oz. Fig Balsamic Vinaigrette
  • 8 oz. Parmesan Cheese, grated
  • 2 oz. Olive Oil
  • 1 oz. Red Pepper Coulis
  • 4 slices 1/4-inch-thick slices fresh Galbani mozzarella cheese ( from one Galbani Fresh Mozzarella 8 oz. ball)

Directions

1)Place 1/4 cup of parmesan in large saute pan and let set until golden brown in color. Flip and brown other side. Repeat three more times. 2) Gently lift parmesan out of pan and mold over cylinder. 3) Place parmesan crisp on plate and add fig caponata in ring mold to hold. 4) Toss arugula in fig balsamic vinaigrette and place on plate. 5) Dip edges of mozzerella in olive oil then into the crushed fava beans. Place on plate 6) Garnish with olive oil and red pepper coulis. 6)
