"From the Grapevine" Caprese Salad

This recipe will fit any menu, with the great taste and texture of the Galbani Fresh Mozzarella paired up with the mix of the sweetness of the grapes and the robust garlic cloves. A dish for all to enjoy!

Ingredients

  • 1 lb. Fresh Galbani Mozzarella Cheese, 1-in. slices
  • 1/2 cup Red Grapes, cut in half
  • 1/2 cup Green Grapes , cut in half
  • 1/2 cup Olive Oil
  • 1/2 oz. Fresh Basil Leaves, chopped fine in food processor
  • 1 dash Cracked Black Pepper
  • 1/4 cup Whole Garlic Ends Chopped Off
  • 1 cup Balsamic Vinegar Reduced

Directions

In heavy sauce pan add olive oil and garlic. Cook on low heat until browned. Cool In sauce pan simmer balsamic vinegar on low eat until reduced to half. Cool Slice Galbani Fresh Mozzarella, arrange on plate or platter. Placed halved grapes in a bowl. Remove 1 Sprig of basil for garnish, chop remaining basil. To the grapes, add garlic, oil,cracked pepper and basil to grapes. Toss and place mixture in middle of arranged mozzarella. Drizzle with reduced basamic vinegar. Garnish with fresh basil. Serve immediately or cover and place in cooler.
