Romano originated in Italy and is often compared to its counterpart, Parmesan. However, in comparison to Parmesan, Romano has a more assertive, sharper flavor. Pecorino Romano is a specific type of Romano cheese. Unlike regular Romano, it is an Italian cheese made from sheep's milk. It is a highly desired cheese because of its salty with a slight nutty and lemony flavor.

Country of Origin:

Italy and the United States

Milk Source:

+ Cow (regular Romano)
+ Sheep (Pecorino Romano)

Appearance:

Creamy white to pale yellow

Texture:

hard, moist, granular

Flavor:

Sharp, intense, piquant, slightly nutty with a lemony tang

Cheesemaking:

Pecorino Romano is made from ewe's milk instead of cow's milk. It must be matured for at least eight months before it is sold. Its salty and piquant flavor comes from the dry-salting procedure incorporated in its manufacturing process.
