Provolone is second in popularity to Mozzarella. However, unlike Mozzarella, Provolone is always made with whole milk. Many times, Provolone results in fuller flavors than Mozzarella due to the numerous cultures used to create it.

Cheesemaking:

Provolone follows the basic steps of cheesemaking. However, the difference lies within the stretching process. While in the cooker stretcher, the warm curd is introduced to extremely hot water. Augers then knead the curd. Eventually, the molten cheese transforms into loaves.
