Cheesemaking:

Production begins when the previous evening's milk is added to the morning's milk. Next, the milk is heated and a starter culture and rennet is added. Coagulation occurs quickly and the curd is broken into tiny pieces for cooking. The curds are then heated and form a solid mass. After the curds become hard, they are removed in cheesecloth, placed in molds and tightly pressed. Last, the cheese is stamped and stored for ripening.
